In this recipe, I will show you how to make that grandma’s version of homemade chicken soup from scratch. Yes, you read it right. I am not going to use any instant powder, broth cubes, and also no MSG will be used! This is going to be an old fashioned, healthy chicken soup. Just look at the contents of the soup:

  • 2 chicken legs
  • 1 backbone
  • 3 baby carrots
  • 3 small cabbage
  • 1 small Chinese cabbage
  • 4 small potato
  • 2 ginger
  • 1 lemongrass
  • 4 cloves garlic
  • 2 teaspoons of salt
  • 1 teaspoon pepper
  • 1/2 nutmeg
  • Optional: Noodles

Step by Step for homemade chicken soup

It is important to do this step by step as we have to make our own chicken broth or stock. The purpose is to have a tasteful soup that is not only yummy but also boosts your immune system. So take your time and you will too get to enjoy that homemade chicken soup as well.

Step 1 preparing the ingredients

Let’s just get all the things prepared by cutting and crushing. This allows for a better release of tastes and vitamins in the soup.

Crush the garlic, lemongrass, ginger. Cut the potatoes, carrot, cabbage and Pok Choi (vegetables). I have chosen young cabbage and Pok Choi. There is a bit more taste that way in the soup.

Step 2: Extracting broth from the chicken

To extract the broth to make chicken, you would need to start with only grilling the chicken fat in a big pan. The purpose is to get the oil out of the skin/fat.

After that add the backbone. More tastes and oil is released. Press on both the fat and backbone to force a bit oil out.

Now add the rest of the chicken, and grill it until it’s kind of brown like in the picture. When it becomes like that, it is time for the next step.

Step 3: The Soup

After step 2, it’s time to add water and make sure that the chicken is submerged. During this phase of making homemade chicken soup it’s important to keep track. The ultimate goal is to keep 70% of the soup, the lest we just let it evaporate by boiling.

During the boiling, remove the foam that comes to float on the top. When about 70% is left, remove the backbone and fat.

Step 4: Adding ingredients to the soup

When 70% of the soup is left, it’s time to add ingredients. Start with potatoes and carrots. A few minutes after add the rest and add vegetables as latest. This takes the shortest time to get done in the soup.

Optional: You can add noodles as well, I didn’t leave space for noodles in my soup. But in this step is where you would add the noodles to boil in the soup, or you would need to boil the noodles separately, and cook it for half the time. Remove the water, and finish the cooking of the Noodles in the chicken soup: Voila Homemade chicken (Noodle) soup.

Step 5: ready to eat!
